Food & Wine’s Best New Chefs spend “2.5 Minutes With genConnect”; At the Aspen Food & Wine Classic, we connected with the Best New Chefs to discuss the honor…

Let’s call them the young and ripe.

We’re referring to Food & Wine Magazine’s 2011 Best New Chefs, the 23rd annual list of ten promising chefs who are stirring things up in the world of food. Launched in 1988, this award recognizes up-and-coming chefs who display creative vision and innovative style in their quest to create mouth-watering dishes.

Each year, the 10 Best New Chefs are chosen by Food & Wine Magazine after a several month-long selection process. The magazine seeks help from restaurant critics, food writers and other trusted food experts around the country to identify outstanding chefs who have been in charge of a kitchen for less than five years. Then the editors travel incognito to taste the food themselves, according to the 2011 Food & Wine press release.

Best New Chef Viet Pham spent 2.5 minutes with genConnect.com at the 2011 Food & Wine Classic in Aspen to dish on what the title of Best New Chef meant to him. Pham attended California Culinary Academy and worked as a home-loan officer before joining Bowman Brown at Forage. (VIDEO):

Best New Chef Bowman Brown, co-chef with Viet Pham at Forage, spent 2.5 minutes with genConnect.com at the 2011 Food & Wine Classic in Aspen. He discusses below how Forage’s modern menu fits into traditional Salt Lake City, UT cuisine. Bowman got his start in one of the region’s best restaurants working at The Dunaway Restaurant with 2006 Food and Wine Best New Chef Mary Dumont. (VIDEO):

Best New Chef Stephanie Izard spent 2.5 minutes with genConnect.com and interviewer 2008 Best New Chef Tim Cushman at the 2011 Food & Wine Classic in Aspen. Cushman and Izard chatted about the Best New Chef win, an achievement she calls “a life-long dream.” The Illinois native and Girl & The Goat restaurant owner plans to continue her success by opening a diner/bar early in 2012 called Little Goat. Best New Chef James Lewis sat down for 2.5 minutes with genConnect.com to discuss the Italian authenticity of his Birmingham Restaurant, Bettola, at the 2011 Food & Wine Classic in Aspen. James travels to Italy every year and consults with several Italian food experts to make sure the food at Bettola is authentic. Best New Chef George Mendes stopped by the 2011 Food & Wine Classic in Aspen and spent  2.5 minutes with genConnect.com. His NYC restaurant, Aldea,  is inspired by the Iberian Peninsula and Mendes’ Portuguese heritage. (VIDEO):

Best New Chef Joshua Skenes stopped by the 2011 Food & Wine Classic in Aspen and spent  2.5 minutes with genConnect.com to explain the open atmosphere of Saison and the importance of a local farm to the restaurant’s success. Skenes believes that native ingredients and primative cooking techniques, such as ember and ash, bring out the fullest flavors in food. He opened Saison in 2009 and is since looking to expand due to the restaurant’s immense success. (VIDEO):

Best New Chef Kevin Willmann spent 2.5 minutes with genConnect.com and interviewer 2008 Best New Chef Tim Cushman at the 2011 Food & Wine Classic in Aspen to discuss his restaurant Farmhaus. The restaurant is dedicated to to supporting local farms and organic food production. Willmann also has a community approach to food, constructing his menus around locally grown produce and partnerships with local businesses. (VIDEO):

Best New Chef Ricardo Zarate stopped by the 2011 Food & Wine Classic in Aspen and spent 2.5 minutes with genConnect.com to serve up his excitement about the Best New Chef and his new project, a cantina called Picca. Zarate’s international cooking experience in places like London and Lima can be seen in the cuisine at his newest restaurant Mo-Chica. The restaurant is actually named for the language of a pre-Incan civilization, and is located in a small food court near USC.  (VIDEO):

The coveted title of Best New Chef comes with a world of recognition and prestige, launching careers for some of the world’s greatest chef talents. Previous Best New Chefs  include Thomas Keller (‘88), Rick Bayless (‘88), Nobu Matsuhisa (‘89) Tom Colicchio (’91); Rocco DiSpirito, (’99); Michael Anthony (‘02); Jonathan Benno (‘06); and Missy Robbins (’10).

“It’s thrilling to find so many outrageously talented chefs in every corner of the country,” said Dana Cowin, Food & Wine Magazine editor-in-chief. The  2011 winners were announced April 5, 2011. They will all be featured in the July issue of FOOD & WINE and will appear at the 29th Annual FOOD & WINE Classic in Aspen, CO on June 17 – 19.
